Soup

So it’s been getting colder out lately and we don’t have too much time before winter is here. But don’t fret there are some perks to this time of year. The leaves are changing and the Constitution Trail has never looked more beautiful. It is time is wear hoodies all day. It is time to make soup.

Being in the mood of this season I decided it was time to break out the crock pot. My girlfriend has a bit of a cold so to make her feel better I decided to make my world famous, or at least it should be, cheesy potato soup. I have only made this soup a handful of times but it has been outstanding. I have never made this soup the same way twice because I don’t use a recipe. I usually go to the store and grab some cream of mushroom, cream of celery, chicken broth, potatoes, onions, and Velveeta cheese. I throw it all in the crock pot and let it sit all day. My girlfriend, my roommate, and I all had two bowlfuls and as I write this post we are all sitting on the couch completely stuffed. We still have leftovers and I am sure we will enjoy it again and again over the next few days.

I was inspired to make soup not only by the season but also by an amazing soup I had the other day at Garden of Paradise. The soup I had at GOP was a wild rice and chicken vegetable. It was the soup of the day and it was amazing. Normally I am not a fan of wild rice but this was the exception. The rice added an amazing texture and flavor to this already delicious creamy soup. Check it out!
